This past weekend, my family and I were up north at a cottage. We kayaked, swam and, of course, relaxed. With only a few days away, one thing I didn’t want to spend too much time doing was the cooking.
White Wine Summer Salmon is a perfect simple meal. Whether you’re up at the cottage or enjoying dinner at home, this is a wonderfully simple dish. Made with only five ingredients, this salmon is ready in only 20 minutes, but it tastes like you’ve been cooking all day.

At first bite, White Wine Summer Salmon has a wonderfully floral flavour. But as you continue to enjoy the fish, you notice the lemon, fresh basil and roasted garlic. That’s one of the best things about this recipe – each ingredient truly adds to the overall flavour. With such a tasty mix of ingredients, my two-year-old daughter thinks that this dish is called, “Yummy Fish!”
Lemon and white wine wonderfully complement the naturally creamy flavour of the salmon. As the fillets bakes, the lemon and wine reduce, creating a simple sauce perfect for fish. The fresh basil enhances the summery taste while the garlic adds a burst of roasted flavour, making this a real crowd-pleasing dish.
When you bake White Wine Summer Salmon, you want to make it in a glass baking dish. This way, as the white wine and lemon juice reduce, you have a wonderful sauce to serve with the salmon. After about 10 minutes in the oven, the sauce and the fish will be ready to serve.

Ingredients
- 1 pound salmon, fillets
- 1/4 cup white wine
- 3 cloves garlic, minced
- 2 tablespoons lemon juice
- 1 tablespoon fresh basil, chopped
Instructions
- Preheat oven to 425 degrees F (220 degrees C).
- Place salmon in a glass baking dish. Cover with white wine, lemon juice, garlic and basil.
- Bake salmon for 10 to 12 minutes or until it flakes easily with a fork.
- Plate and enjoy!
