How to Make Herb Mustard Marinade
Now, let’s talk marinade. With a mix of Dijon mustard, apple cider vinegar, herbs, and spices, this marinade tastes great on practically anything. From vegetables to fish and chicken, it’s is super versatile. Plus, it’s really easy to make.
Herb Mustard marinade is so easy to make, it almost makes itself. Simply combine Dijon mustard, apple cider vinegar, oregano, parsley, onion powder, garlic powder, salt, and pepper. At this point, the marinade will seem like a thick paste. You can thin it with water and oil to create a perfectly tasty sauce. If you want to make the sauce even healthier, you can substitute all of the oil for water.
Since both the trout and cauliflower use the same marinade you can mix them both together and use two-thirds of the marinade for the cauliflower and rest for the fish. Or, you can make them at the same time in two small bowls. Either way, with a tasty mix of tangy and savoury, you’ll have two dishes that are sure to impress. Pretty great, right?!?

How to Make Whole Roasted Cauliflower
There is something amazing about whole roasted cauliflower. It’s tender and packed with flavour. Plus, it’s super easy to make. Are you noticing a theme here? Plus, it’s so tasty, you can enjoy it as a delicious side or main dish.

After you wash the cauliflower, you’ll want to carefully cut away the green leaves. Be careful, you’ll want to make sure the cauliflower keeps its original shape, that’s the beauty of a whole roasted cauliflower.
There will be some extra stem from around the green leaves under the cauliflower. Carefully cut it off. You want the cauliflower to be able to sit upright. This way, you can marinade the cauliflower and it can bake without moving.

Now it’s the fun part! Place the cauliflower in a baking dish. You may find it easier to use a dish with a cover, or you can always cover the marinated cauliflower with tinfoil.
To give the cauliflower an extra boost of flavour, you can marinade the inside of the cauliflower before marinating the outside. First, turn the cauliflower upside down and carefully spoon some of the herb mustard marinade inside.
When it’s covered on the inside, place it on the baking dish with the bottom side down. Using a spoon or silicone brush, cover the outside of the cauliflower. Since the cauliflower has a textured surface, you’ll want to make sure that the entire cauliflower is covered.


When the cauliflower is fully marinaded, it’s ready to bake. Simply cover the baking dish with a lid (or tinfoil) and let your oven do its magic.
The great thing about Herb Mustard Baked Trout with Whole Roasted Cauliflower is that both dishes can bake in the oven at the same temperature. The cauliflower simply needs a little more time to bake. So, while the cauliflower is in the oven, it’s time to prepare the trout.

How to Make Herb Mustard Baked Trout
Now, let’s talk trout. With a light flavour and flaky texture, trout perfectly pairs with herb mustard marinade. Trout is very similar to salmon, it has a lighter flavour. You can substitute trout for salmon, it also tastes delicious with this marinade.

Place fillets of trout on a parchment covered baking pan. Cover with herb mustard marinade. After the cauliflower has baked for 30 minutes, it’s time to bake the trout. Simply bake it in the oven for 15 minutes and leave the cauliflower to continue baking.

Dinner is served! The fish is ready and all that’s left is slicing the cauliflower.

Ingredients
CAULIFLOWER
- 1 head cauliflower
- 3 tablespoons water
- 2 tablespoons Dijon mustard
- 2 tablespoons apple cider vinegar
- 1 tablespoon oil
- 1 tablespoon oregano, dried
- 1 teaspoon parsley, dried
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/4 teaspoon pepper
TROUT
- 1 pound fillets trout
- 1 and 1/2 tablespoons water
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar
- 1/2 tablespoon oil
- 1/2 tablespoon oregano, dried
- 1/2 teaspoon parsley, dried
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
Instructions
- Preheat oven to 375 F (190 C).
- In a small bowl, combine all of the ingredients under the cauliflower heading except the cauliflower.
- Place a whole cauliflower with leaves removed on a baking dish. Cover the bottom/inside and top with marinade.
- When cauliflower is covered with the marinade, place a lid or tin foil on top of the baking dish.
- Bake for 30 minutes.
- Place trout fillets on parchment covered baking sheet.
- In a small bowl, combine all of the ingredients under the trout heading, except the trout.
- Evenly spoon the marinade onto the trout.
- After the cauliflower is finished baking, place the trout in the oven and bake both for 15 minutes.
- Plate and enjoy!
